How We Test Our Honey
Home tricks like a glass of water, a lighter or vinegar can't reliably detect adulteration. Only a lab can, so we test every batch before it goes on sale.

What we test in every batch
- Moisture
- no more than 20%. Higher moisture means the honey was harvested unripe or diluted.
- Sugars
- fructose plus glucose of at least 60 g per 100 g, and sucrose no more than 5 g. High sucrose is a sign of added sugar.
- HMF
- no more than 40 mg per kg. High HMF means the honey was heated or stored badly.
- Enzyme activity (diastase)
- at least 8 units. Heated honey loses its enzymes.
